Hamachi is also known as Yellowtail or Japanese Amberjack. It is a Pacific Ocean fish found primarily around Hawaii and Japan. This week I am in San Diego and enjoyed this preparation. The fish was served raw with slices of pineapple and topped with just a hint of soy sauce, fresh cilantro and slices of serrano chilis.
Every bite was fantastic! The fish was fresh to the extreme and the flavor was delicate and rich. The herbs, chilis, and pineapples heightened the flavor of the fish without overpowering it. It takes a confidant hand to do so little and let the main ingredient become the star of the show!
